I've found some information online already and am just looking for confirmation that this is actually the case - we use Polycom CX700 phones in our environment, which run on OCS (or MOC depending on your preferred abbreviation) 2007 R2.According to info I found on several sites, once the phone has Lync firmware, it is not possible to downgrade the phone's firmware unless you have an operating Lync 2010 environment.Seeing as how we're OCS/MOC 2007 R2, that's not entirely helpful, and we have a couple of the phones that are brand new but with Lync firmware installed.
